The established timeline (as at 1997 anyway) from the Star Trek
   Encyclopedia is ...

2230 Spock is born on Vulcan

2233 James T. Kirk is born in Iowa on Earth

       2249 Spock enters Starfleet Academy

2250 Kirk enrolls in Starfleet Academy
Serves aboard the USS Repblic as a cadet

2252 Spock begins serving on the Enterprise as a cadet

2253 Spock graduates from Starfleet Academy

2254 Kirk graduates from Starfleet Academy

2264 Kirk begins historic five-year mission in
              command of the Starship Enterprise

This includes some educated guesswork based on calculations from the
facts given in various TV shows, movies, etc.

It's now been confirmed as a fact that the next movie will be about
pre-TOS Kirk and Spock, almost certainly at the Academy.

There's now some rumour that William Shatner will have some role or
other in the new movie ... let's hope they're not resurrecting Kirk
through some idiotic time travel nonsense yet again.
