that's easy enough to take care of, though... just do more eggs and add their
yolks to the mash... that or chop all of what you have and use it as egg salad
for sandwiches or on lettuce or such ;)

FWIW: it can be hard to get the ratios right... especially when something
calls for "3 large eggs" and your "large" eggs are smaller or larger than
those the recipe writer used... our "large" eggs hardly fit in to the recycled
egg cartons that are labeled "large eggs" from the grocery store ;)
