No that is right. They didn't have that planned out about the Final
Five and RDM flat out admitted that he likes being spontaneous as he
went along, however that doesn't mean they didn't have an overall
outlook for the show, that for example the Good Cylons and the
remains of humanity will find New Earth and co exist and intermingle
and for the original mythology how the Cylons came about and the
cyclicalness of the humans "enslaving" them, Cylons rising up and
attacking humans-and previous generations of Cylons set.

I am sure that they knew how one season was going to begin, arc and
end, and who would be left standing and where the story would be at
   that time.

It is the *individual* episodes that they fully admitted that they
didn't have planned out because they wanted to be free to go in
different directions with the individual characters. Like maybe at
one time they made have considered to have Boomer live and Athena
die, or both live or both die, Kara to stay dead etc. but they new
that the Good Cylons would end up on New Earth together with the
   humans.
