I am still using 98 and XP for that reason. There has only been
downgrades ever since. XP brought together Windows 9x and NT users
under single ecosystem and it had choices, simple UI for beginners
then ability do lot advanced setting from older windows, you could
make it act like Windows 95 if you wanted without third party
software. On Windows 10 good luck even with third party software get
that classic look or get power user dialogs back

Problem is that most people are simple minded compared to you. You are
much more open minded by not falling for "only teh latest and
greatest" mindset that people are having. Their use of computers is
only browse pictures of cats and watch video clip, no serious word
processing or anything else that computers were meant to use. They
think it is just snap of fingers to ugprade.

Let me give example from back when I used to work more with industrial
equipment: There was line used for analyze structural damage on any
returned products factory recieved. That was done using Windows 2000
and application was running on Server 2003 using custom databases.
Server was becoming old and had to be virtualised. I though all I need
to do is convert it to VHD and move into Hyper-V server.

Last time I had used Hyper-V was back in ws2008 where there was quest
addon cd. However this was removed on Server 2016 making installing
legacy hw harder. I started searching for where obtain addons and
found too many blogposts where people kept saying same "just upgrade
application to newer version". Problem was that could not be made work
under newer Windows server, it had been tried and cost of renewing it
would have meant also replacing all analysis devices, computers and
client programs and that would have been millions worth of cost. Thing
is unlike consumer device most of industrial devices can be fixed even
if they are over 20 years old.

Eventually I did manage find ISO I needed and was able succesfully
transfer server into Hyper-V and as far as I know it is still in use.

It would be good for those "experts" who keep spouting upgrade all the
time work even one day on industrial equipment to get cured from shiny
   new stuff syndrome.
