Digging around a bit, it looks like the two door land yachts were more
common (but not exclusive) to the "Personal Luxury" models which were
supposed to be a cross between luxury cars and sports cars, although the
specs don't seem particularly sporty -- looking around a bit it seems
like the 1967 Eldorado might have had a slower 0-60 time than a Toyota
   Tercel.

"Full Size Luxury" cars tended to have four doors, but even those
weren't across the board. It looks like it driven to a large extent by
style preferences, with I guess 1960s designers and buyers thinking the
extra doors somehow made boats less stylish.
