   If you swap 'halloumi' for 'feta',  you can count me in amongst the   
   minority. Pizza cheese must be stretchy-stringy (when hot). Feta will   
   never do that, but halloumi will. But pizza is Italian, so it goes with   
   mozzarella, (like coke goes with rum, and gin goes with tonic).
