What it does not show is that the form of iron       compounds found in plant sources is far less available then those in       animal sources.              The animal sources are easily absorbed during digestion while plant       sources are not and pass through the gut unabsorbed. One must pay very       careful attention to the combination of plant sources in ordr for enough       iron to be absorbed. Some combinations help and others hurt absorbption       of iron.              People who have animal sources in their diet on a regular basis don't       have low iron problems.
