The Clerk of the Kitchen checked the finished dishes and they were arranged on
the table. The dirty dishes were washed using lye made from wood ash and every
utensil, pan, dish were supposedly scoured with a cloth but a witness claims
that they were washed once a year, for they reeked of foul smell that would
convince someone that they were used as pisspots.
The Clerk of the Kitchen had a huge responsibility. He mamaged the staff and
resources, held the keys to the stores and distributed food accordingly. He
   also
had to ensure that the King's dish be the best and sweetest stuff that would be
got. In return, he was permitted to eat the same food as was served to the
   senior courtiers.
Three Master Cooks assisted the Clerk. They were important personages and
   lorded
over the Great Kitchen and The King's and Queen's privy Kitchens. The Cooks did
fancy cooking and had a staff to help prepare food. Henry VII employed a French
cook as "Yeoman of the King's Mouth" at his privy kitchen
