To the sound resulting from the effects, to know if it's the right sound.

But the mod wheel is only one control, but a controller with 9 sliders, or
   drawbars, would be much better.

I thought all that stuff was totally assignable, for whatever function you
   wanted to use it for.

Yep, stereo capability has so few applications in a Live performance.

I only know of two instrument effects that although recorded initially in
the studio, could be used onstage in stereo - one is the Rhodes 'suitcase'
model electric piano "ping-pong tremolo", and the other is Jimmy Page's
guitar near the end of "What Is And What Should Never Be" from the Led
Zeppelin II album...but aside from that, there's not all that much to
   justify going stereo onstage.

The purpose of stereo in the first place it to reproduce the 3D spatial
audio effect that comes naturally with large stages and large venues anyway,
so apart from a 'bouncing' guitar riff or a "ping-pong" piano, what's the
   use?

When a concert is recorded, the mics are placed far enough apart to get a
nice natural stereo effect and that's all it takes.
