   I'm not sure where you are. In Europe (I'm in UK)   
   shiitakes do not grow wild, they're really a Japanese   
   mushroom, though if you can get some spawn you might   
   manage to grow some.   
      
   Oyster mushies can be treated like any other, but note   
   that the really big brackets can be rather tough,   
   especially near the wood where there is a thick white   
   bit. Cut that off and you should be OK. The little   
   brackets are better, and that is what you can buy in   
   the shops - a lot of recipes suggest only a couple   
   of minutes cooking for these. An important point is   
   that you shouldn't eat any wild mushroom without   
   cutting it in half to look for carnivorous foodstuffs.   
   Wild Oysters are rather prone to white maggots.
