   The texture of Auricularia auricula and similar species have been   
   described as "sliced wet suit."  But, the chewy, rubbery texture is   
   considered indispensable in Chinese hot and sour soup.   
      
   I think a mushroom with rubbery texture can be sliced, or diced, or   
   powdered and goes well in soup, or with noodles and white sauce,   
   especially if it contributes a good flavor.  And, cooking can help to   
   express a mushroom's flavor.  Powdered mushrooms are almost all flavor,   
   like a spice, without any textural component.
