   Seeing blushers mentioned elsewhere, one reason is that they are   
   poisonous if eaten raw or poorly cooked.   
      
   However, they are to die for!   
      
   BTW, many of the flavours in mushrooms are fat-soluble, and are enhanced   
   by cooking in/with a little oil or fat.
