   You'd have to look at modern scientific papers on the subject.   
      
   My attitude to stalks and other mushrooms and parts not used immediately   
   is to preserve them.   
      
   Tougher parts I dry, then powder in a liquidiser, and keep in an   
   airtight container. The powder can be used in soups, casseroles, sauces   
   etc.
