   I cut the stalk at ground level with a sharp knife.  No shrimp odor was   
   noticed.  Stalk is white, with no coloration at all.   
      
   Rinsed 'em with water and sprinkled them with sea salt to prepare for   
   smoking.  The salt really softened them, and they shed a lot of (pink_   
   fluid.  I will gently dry them (or try to) and coat them with diced   
   herbs and olive oil before smoking
