      From: rusty.hinge@foobar.girolle.co.uk              I go for frequent visits to Nursie at the surgery to have my INR       (blood-clotting) tested, and on the way there I pass the rolling grass       frontage of the council offices where frequently I find bluelegs       (bluestalks, blewits, Lepista saeva) at this time of year.              Yesterday, having a late appointment, I did a more thorough search and       collected about half a carrier-bag of them.              They are now salted down in two big jars. The brine they will generate       is excellent for adding to stews and casseroles, while salting tends to       compact the fruitbodies and (after soaking in fresh water) render them       very meaty in texture.              --       Rusty Hinge       To err is human.
