   Edit>>Mail & Newsgroup Account Settings>>Outgoing server   
      
   (Just another path to the same place.)   
      
   Click the Advanced button.  Add your new SMTP server there, and make it   
   default.   
      
   In that same dialog, you can remove the old server.   
      
   Since your email accounts are probably set to use the default SMTP   
   server, it should work. However, to be sure, go to each account and look   
   at Server Settings.  Click the Advanced button, and make sure your new   
   server is set for that account,
