I have tried gparted to create Linux partitions, but on reboot and
trying to install, the installer did not see the Linux partitions or the
   Windows ones.

I read there is one way to try, but it's kind of last resort in a way,
get gparted to wipe the entire drive and format it as a DOS partition
table, where Windows7 should then think to install the old partition
system rather than GPT. This would not be a big deal as I bought a new
drive to install to, and Windows7 is a fresh install rather than copy
   from other partition.

However, the point is that I am trying to test what works and what
doesn't. As soon as I try a work around, I can no longer test the method
I wanted in first place, so one less person to test for converts to
Linux. I don't have spare hardware to test on.

Knoppix is a good "disaster" recovery tool, I used it mostly to fix
   Windows.

   I suppose it's possible.

I had no choice, needed new processor, but no motherboards without UEFI
   that supports the processor.
