Avocado Jell-O
Yes, avocado can even be made into dessertCÇöitCÇÖs a stone fruit, after
allCÇöjust like apricots, peaches and plums. While it may be mistaken for
lime, one bite shows that thereCÇÖs no tartnessCÇöjust a light, smooth
sweetness. Recipe yields 6 servings.
Ingredients
1 package (3 ounces) lime-flavored gelatin 1 tablespoon sugar
1 tablespoon lime juice
2 fully ripened avocados, halved, pitted, peeled and coarsely chopped Extra
avocado, berries, lime wedges, lime peel and/or citrus segments for garnish
(optional)
For Berry Pur+¬e
1 cup blackberries or strawberries
3 tablespoons sugar
1 tablespoon lime juice
Preparation
In bowl, prepare gelatin following package directions; stir in
sugar and lime juice. Chill until mixture is the consistency of
egg whites, stirring occasionally. In bowl of food processor,
place avocado; add gelatin mixture; process until smooth and
creamy. Spoon mixture into six 2/3-cup molds or 1-quart serving
dish; cover and chill until firm. Quickly dip molds into hot
water; turn out onto serving plates. Serve with Berry Pur+¬e
(below), and if desired, diced avocado and lime wedges. Berry
Pur+¬e: Process 1 cup blackberries or strawberries with 2
tablespoons sugar and 1 tablespoon lime juice until smooth.
Strain into small cup; cover and refrigerate until ready to use.

Beautiful summer dessert, bright with fresh fruit and flavor. Appealing to the
taste buds as well as the eye. A favorite at every summer picnic Ingredients
1 box each, sugar free Lime, Lemon and Strawberry Jello
1 cup coarsely chopped strawberries
1 cup fat free sour cream
1 cup Thick & Creamy Light Lime Yogurt
1 medium avocado, peeled, pitted and chopped
1 lime, juice and zest
6 parfait glasses

"In the late fifties or early sixties, either Ladies Home Journal or Good
Housekeeping or Better Homes and Gardens had a wonderful recipe for an three
layered angel food cake that had a whipped coffee flavored icing in between
each layer topped by more of the icing with toasted slivered almonds on to. I
cannot find the recipe my mother had and loved the cake and would love to make
it again.
