Last week Karen C requested a recipe for Peanut Butter Pie. We had several
submissions.  Thanks to all!

Good afternoon!

Karen C. requested a recipe for Peanut Butter Pie.  This one makes absolutely
the BEST Peanut Butter Pie my husband and I have ever tasted!  It's not heavy
like so many are.  The consistency and flavor are just perfect for dessert. 
(Or for a mid-afternoon snack, for that matter!) I don't think she'll be
disappointed with this one! Diane in Central Illinois

PEANUT BUTTER PIE
1 pre-made 9" chocolate cookie crust 1 c. peanut butter
1/2 c. sugar
8 oz. cream cheese
12 oz. whipped cream (or 1 8 oz. tub Cool Whip) 2 T. hot fudge or chocolate
sauce for garnish (optional)

Whip together peanut butter, sugar & cream cheese.  Fold in whipped cream. 
Fill crust & chill completely before serving.  Drizzle with hot fudge or
chocolate just before serving, if desired.

Karen C requested a recipe for Peanut Butter Pie - It sounds like one you had
in one of your newsletters a while back and I had saved. Don't know how long
back but here is what you I saved:

Peanut Butter Cream Pie made with cream cheese 1 1/4 cups chocolate cookie
crumbs
1/4 cup white sugar
1/4 cup butter
1 (8 ounce) package cream cheese, softened 1 cup creamy peanut butter
1 cup white sugar
1 tablespoon unsalted butter, softened 1 teaspoon vanilla extract
1 cup heavy whipping cream

1.Preheat oven to 375 degrees F (190 degrees C). 2.Combine 1 1/4 cup cookie
crumbs, 1/4 cup sugar, and 1/4 cup butter; press into a 9-inch pie plate. 
Bake in preheated oven for 10 minutes.  Cool on wire rack.
3.In a mixing bowl, beat cream cheese, peanut butter, 1 cup sugar, 1
tablespoon butter, and vanilla until smooth.  Whip the cream, and fold into
the peanut butter mixture. 4.Gently spoon filing into crust. Garnish pie with
chocolate or cookie crumbs if desired.  Refrigerate for several hours before
serving.
