i've said it before and it always seems to be true... even with decent knife
sets... it all comes down to using "cheap" chinese stainless steel... more
specifically that which has larger chunks of carbon in the mix... after a
time, this carbon starts breaking out and then you have a hole that gets worse
and worse unti lit breaks...

now, if the chinese and others would learn to grind their materials up smaller
and not allow these larger particles to get into te mix, then things would be
a whole lot better... i will hold off pointing at the bean counters and
lawyers which are really at the root of things with corporate greed and trying
to satisfy stock holders more than they are trying to ensure that they are
making *quality* products...
