But some of them are a good way to get experience working with soldering irons,
multimeters, etc.

One problem with vintage computers is that you can't take them to Best Buy to
get them repaired.  So if you want to use them, you'll need more knowledge. 
Even more if you want to get them cheap (i.e. not working) and restore them.

I'm by no means an expert, but I have restored several systems to working
condition.  And learned a great deal along the way.
