Just got my digitized version of the Steve Jobs demo of NeXTSTEP 3.0 back from
the company who digitized it for me. It's a 1,1GB file ripped from the NTSC
video tape I had sent to me over about 20 years ago. You can download it now
from ftp.fidonet.io/pub/NeXT/Videos/ and it's called Nextstep_ve
sion_3.0-Steve_Jobs.mp4.   And yes, you need a FTP client for that. 

There is a way worse version of this available on Youtube since many years
back. This version was ripped by me using a cheap NTSC VHS player and some
cheap hardware on a Windows PC and it's really bad so if you want the best
possible version of this (next to getting it from the original DV tape), this
is it.
