   I like "Mathematical Methods in Artificial Intelligence" by Edward Bender.   
   As the title suggests, it concentrates on mathematical tools and how and   
   where they can be applied, the "nuts and bolts" rather than complete   
   systems. It is a undergraduate text book which is suitable for   
   self-teaching. My edition (1996) is a bit dated and has a lot of typos, so   
   I'd recommend a later edition if there is one.
