   Try Bayesian inference for various kinds of models.  Dirichlet   
   processes are hot right now.   
      
   The Berkeley crowd are doing some very nice variational methods for   
   this.  Some of these models don't have nice easy Gibbs samplers,   
   particularly the infinite hidden Markov model systems.
