   Artificial Intelligence is a very large subject so you can only learn   
   the basics in a one semester undergraduate course. Typically you will   
   first learn about searching, planning, knowledge representation and   
   logical reasoning. However, these topics can be of limited use   
   nowadays and I think most of the interesting applications of AI are   
   in Machine Learning especially statistical learning. There is a   
   chapter in the Russell and Norvig book about Statistical Learning.   
   There are also other books that cover the topic in more detail. So a   
   suggestion for the project would be to find a simple dataset and build   
   a Neural Network to do some simple binary classification. You can   
   build on this project to learn more in the future.
