But how old does an iPhone or iPad have to be before it can no longer
   get the latest OS?

iOS 17 supports iPhones as far back as the iPhone XR released in October
2018, and the iPad is no different.

Assuming iOS 18 is released on the usual schedule, Apple devices fully 6
years old will finally stop being supported.
