   I don't know about "setting" the kernel, but Update Manager let me delete   
   the newest kernel (if I booted in from an older kernel) and than I was able   
   to block the update to the newest kernel. The next time I booted my computer   
   it automatically loaded the older kernel.   
      
   For example, on this computer I was upgraded to kernel 5.15.0-170. I booted   
   into 5.15.0-168, went to Update Manager and deleted 5.15.0-170, then blocked   
   Update Manager from automatically updating to 5.15.0-170. I can still   
   install 5.15.0-170, but it won't do it automatically. So it's now blocked.   
      
   (I think I'll install 5.15.0-170 to make sure I can replicate this again.   
   Maybe I'm misremembering something.)
