3 c Mixed vegetables (carrots,
- turnips, green peas,
- cauliflower)
2 Ripe tomatoes; chopped
1/2 c Yogurt
1 tb Lemon juice
1 ts Oil
2 ts Salt
3 c Water
1/2 Onion; chopped

1 c Coconut; grated
1/2 Onion; chopped
2 Serranos; chopped
3 Black cardamom pods
5 Cloves
2 Cinnamon sticks (1")
1 ts Fresh ginger; grated
Grind masala ingredients in an electric blender and set aside.
Wash and cut the vegetables (except tomatoes) and cook with 1 cup
water in a pressure cooker for 1 minute after bringing to maximum
pressure. Mix the ground masala with the yogurt. In a separate pan,
heat the oil and saute onion. Add tomatoes and stir for 2 minutes.
Mix in cooked vegetables, salt, and lemon juice. Add ground
ingredients and mix well. Bring to a boil and remove from the heat.
Garnish with cilantro leaves.
