Title: Tastes Like Mom's Chili

Yield: 6 Servings
1 tb Olive oil -OR-
1/4 c Water
1 lg Onion; chopped
2 tb Chili powder; or to taste
1 ts Dried oregano
1 ts Ground cumin
1/8 ts Cayenne
28 oz Can crushed tomatoes
1 c Water
2 c Green lentils;
- cooked or canned -OR-
2 c Seitan; finely chopped -OR-
2 c Reconstituted soy curls
3 c Cooked kidney beans -OR-
30 oz Beans (2 cans);
- rinsed & drained
Salt
Black pepper; freshly ground
Heat the olive oil or water in a large pot over medium heat. Add the
onion, cover, and cook until softened, about 5 minutes. Stir in the
chili powder, oregano, cayenne, tomatoes, and water. Bring to a boil,
reduce the heat to low, cover, and simmer for 15 minutes.
Stir in the lentils, beans, and salt & pepper to taste. Simmer for
about 30 minutes to blend the flavors. Serve hot.
