      Title: Immunity Boosting Winter Soup

    1/2 c  Yellow moong dal (100 g)
      1 c  Carrots (150 g); chopped
      1 c  Pumpkin (300 g); diced
      1 c  Spinach (100 g); chopped
      1 tb Fresh ginger (15 g); grated
    1/2 ts Turmeric powder (2 g)
      1 ts Cumin seeds (5 g)
      1 ts Coriander powder (5 g)
      1 pn Hing
      1 c  Fresh coconut milk (250 ml)
    1/4 ts Black pepper (1 g)
           Himalayan pink salt;
           - to taste
      1 tb Coconut oil (15 ml);
           - cold pressed
      4 c  Water (1 l)
           Fresh cilantro leaves;
           - for garnish (optional)
 
  This warm, nourishing, and easy-to-digest soup is packed with sattvic,
  immunity-boosting ingredients to keep you healthy and balanced during
  the cold winter months.
  
  Heat coconut oil in the pot on medium heat. Add cumin seeds and saute
  until fragrant.
  
  Add grated ginger, hing, and turmeric powder. Stir for a few seconds
  to release their aromas.
  
  Add chopped carrots, pumpkin, and spinach. Saute for 2 to 3 minutes.
  
  Rinse yellow moong dal thoroughly and add it to the pot. Stir to
  combine.
  
  Add water, coriander powder, and Himalayan salt. Bring to a boil, then
  lower the heat and simmer for 20 to 25 minutes until the dal and
  vegetables are soft.
  
  Blend the soup with an immersion blender or leave it chunky for
  texture.
  
  Stir in coconut milk and black pepper. Simmer for 2 to 3 minutes.
  
  Serve warm with a garnish of fresh cilantro leaves (optional).
