Title: Italian Sausage With Lemon

Yield: 1 Pounds
2 lb Pork butt; coarsely ground
1/4 lb Pork fat; coarsely ground
1 tb Fennel seed; freshly ground
1 tb Dried parsley
3 cl Garlic; crushed
1 ts Salt
4 tb Dry white wine
2 tb Lemon zest; freshly grated
Lemon is just great with pork, and this sausage with lemon is
delightful. It is not heavy but rather very refreshing.
Mix all the ingredients together.
Let stand for 1 hour and mix again. Stuff into casings.
