3 1/2 qt Vinegar
6 ts Chili powder
4 Oranges; grated zest of
3 ts Cinnamon
6 c Sugar
3 ts Nutmeg
3 ts Salt
1 1/3 lb Raisins

4 lb Dates; pitted
6 Oranges; remove seeds,
- use 4 that were grated and
- 2 more with peels
3 lb Onions
3 cl Garlic
3 ts Nutmeg
3 Ginger
Bring base ingredients to a boil. Puree chutney ingredients through
juicer.
Add to vinegar and bring again to boil. Cook 5 minutes. Lower heat,
simmer gently for 1 hour. When cold, bottle and store in air-tight
bottle. Keep refrigerated.
