Title: Chippi (Fried Rice Balls In Sweet Syrup)
Categories: Desserts, Indian
Yield: 1 Batch
3 c Rice flour
1 c Sugar
1/2 c Water
5 c Coconut milk; up to 6 c
1/2 c Black pea powder
1 tb Sesame seeds
Ghee or oil
1/8 ts Salt
Boil coconut milk until nutty oil flavor emerges. Mix rice flour,
black pea powder, sesame seeds, and salt in a bowl and add the
boiling milk to the mixed flour. Make small balls with the mixture.
Then impress balls with a greased fork or any design desired. Set
them aside on a buttered plate. Once all the balls are impressed, fry
in ghee/oil one plateful at a time and drain. In water, heat and
dissolve the sugar into a thick syrup. Add the fried balls to the
syrup and mix well. Cool and keep airtight.
