Title: Chili Couscous Pie

Yield: 6 Servings
2 1/4 c Water
1 1/2 c Instant couscous
1 ts Olive oil
1/2 ts Salt
1 c Vegan cheddar cheese;
- shredded -OR-
1 c Cheesy sauce
3 c Chili; your favorite
1/3 c Onion; minced
4 oz Can diced hot green chiles;
- drained
Preheat the oven to 350?F. Lightly oil a 10" baking dish or pie
plate.
Bring the water to a boil in a large saucepan over high heat. Stir in
the couscous, olive oil, and salt. Cover and remove from the heat.
Let stand for 10 minutes, then spread the couscous over the bottom of
the prepared baking dish.
Sprinkle the couscous with 1/2 cup of the vegan cheese, then top with
the chili. Sprinkle evenly with the onion, chiles, and remaining 1/2
cup cheese. Bake until bubbly, about 30 minutes. Let rest for 5
minutes before serving.
