2 c Red rice flour; roasted
Water; boiling
Idiappams are made with a special wooden press, much like a spaghetti
maker, available from most South Indian and Sri Lankan groceries.
Add 1 ts salt to the boiling water and mix it slowly into the flour
with a wooden spoon. The dough should be thick and not stick to the
mixing container. Take a little dough and put into the idiappam press
and press out the dough strings in a circular motion over idiappam
steamers. Steam the idiappam for 20 to 25 minutes. Serve for dinner
or lunch with sodi or coconut chutney.
