My "Cheap Man's SAN" is one of my SuperMicro 4U servers, which has (36) 3.5" drive bays. You can really load it up with drives and make a cheap SAN by loading Windows Server 2022 or whatever you want. I like hardware RAID, but you can present iSCSI to VMWare if you like to run remote storage. I have separate 10Gbps NICs that I use for just the iSCSI storage network, but 99.9% of the time, I run all the VMs on local storage.
