Title: Praline Susies

Yield: 18 Servings
2 c Sugar
1 c Buttermilk
1 ts Baking soda
1/4 ts Cinnamon; or more
1 c Pecans; chopped
1 ts Mexican vanilla
Use large heavy pan with handle. Bring sugar, buttermilk,
soda, cinnamon to a boil over medium to medium-high heat.
Stir constantly with a wooden spoon. Boil to soft ball
stage or 234ºF/112ºC on candy thermometer. Remove from
heat. Add pecans, vanilla, and stir wildly until candy
looses its shine, about 10 minutes. Drop on waxed paper.
Makes about 18 candies. Once it loses its sheen, you
must work fast or it will set up.
