      Title: Fish Tacos

      1 c  A-P flour
      2 tb Cornstarch
      1 ts Baking powder
    1/2 ts Salt
      1 lg Egg
      1 c  Beer
           +=OR=+
      1 c  Club soda

MMMMM---------------------------SAUCE--------------------------------
    1/2 c  Plain yoghurt
    1/2 c  Mayonnaise
      1    Lime; juiced
      1    Jalapeno; seeded, minced

MMMMM-----------------------PICO DE GALLO----------------------------
      1 ts Minced capers
    1/2 ts Dried oregano
    1/2 ts Ground cumin
    1/2 ts Dried dill weed
      1 ts Ground cayenne

MMMMM---------------------------TACOS--------------------------------
      1 qt Oil for frying
      1 lb Cod (or other firm, white
           - fish) filets; 3 oz ea
     12 oz Pkg corn tortillas
    1/2 md Head cabbage; shredded fine
 
  To make batter: In a large bowl, combine flour, cornstarch
  baking powder, and salt. Blend egg and liquid, then quickly
  stir into the flour mixture (don't worry about a few lumps).
  
  To make white sauce: In a medium bowl, mix together yoghurt
  and mayonnaise. Gradually stir in fresh lime juice until
  consistency is slightly runny. Season with jalapeno, capers,
  oregano, cumin, dill and cayenne.
  
  Heat oil in deep fryer to 375ºF/190ºC.
  
  Dust fish pieces lightly with flour. Dip into beer batter,
  and fry until crisp and golden brown. Drain on paper towels.
  Lightly fry tortillas; not too crisp.
  
  To serve, place fried fish in a tortilla, top with shredded
  cabbage and white sauce.
