OK - I edited /boot/grub/menu.lst, and added vga=ask to the end of the line
for my kernel boot. I do get a menu of modes then, and the option to
"scan" as well. I experimented with both, and here is what I found on my
system.
I can get a higher resolution for about half of the boot process, but then
it appears to revert back to 80x25 (or something similar) when it hits
"loading terminal font" or some such.
Do I need to (or is it possible) to change the terminal font on Ubuntu
server? From everything I can find in searching the web and Ubuntu forums,
the terminal font is for x server, which I probably don't have on the
Ubuntu server with no GUI.
I'll have to keep playing with it tonight... Appreciate all of your help
