OK - I took a look and yes I do have an /etc/rc0.d - rc6.d directories.
They look like they have symlinks to stuff that starts (I see my raid,
apache2, vsftp, etc) in them. Assuming these are what fires at different
run levels? I was kinda surprised, each one has very similar entries, I
see Apache and vtftpd in each of them, and would have expected to see
those entries only one time. But I'm not really sure what I'm looking at
in there.

Thanhks for any help - I'll look around the Ubuntu forums and Debian
sites I know of and see what I can learn more about these /etc/rcx.d
directories.

Ubuntu - every day a new learning experience! ;-)
