I've used gtkpod and it works ok. It feels like itunes, ie the
interface is similar.
To "rip" vinyl try gramofile. This is actually a command line program,
but it does have a usable though primitive VU meter to adjust your
record level (using your alsa mixer). You can either save the resulting
wav file to disk or pipe the output of gramofile into your favorite MP3
or OGG encoder.
Gramofile also has a click and pop filter, though I've not tried this
feature. It also makes some attempt to break up a disk into tracks by
looking for 'gaps' in the music. This only works if you save the wav to
discrete files.
