I'm running 6.4, about to migrate to 7.0. I'm loving it, and didn't find it 
that difficult, but I'm familiar with virtualization. I've played with 
VMWare Workstation and VirtualBox for years, and bare metal virtualization 
with VMWare vCenter.

I was attracted to Proxmox because it was basically Debian under the hood 
and would run on a wider array of hardware than ESXi. I'm running my 
virtual farm on a Thinkpad with a broken screen.   :)

There's quite a bit of info on YouTube about Proxmox, check out 
NetworkChuck's channel for a couple of good videos - if you want to try your 
hand at it again.
