     about 1cm, flip after a bit.  i like things on the   
   firm side so they don't get too mushy, but you can do   
   what you like according to your own preferences.  :)   
      
     with a coating on them i'd probably want it cooked   
   to golden brown at least (or more) and that is too   
   mushy for me.   
      
     you mention bitterness being an issue but that hasn't   
   ever been a problem for me as i tend to like things   
   tart.
