   Grin, I dont do much skirt steak but I have a common marinade we use for   
   many things.  Unfortunately I don't know which one of the groups above you   
   are using!  Ah well, hopefully they won't mind a simple recipe (grin).  I've   
   kill filed the obvious abusers but not the apparently innocent stray folks.   
      
   I like this one particularily well on pork loin sliced to about 3/4-1 inch   
   thick 'steaks' (3 in our case as that's how many we feed a night here).   
      
   -1/4 cup soy sauce (I use Datu Puti brand, Philippines)   
   -1/4 TS 'Patis' (Tiparos brand from Thailand best)   
   -1/4 cup 'Bannana sauce' (Jufran brand) or 'Thai hot sweet chicken sauce'   
   (Prefer flying duck brand from China)   
   - Optional but normally added, 2 cloves minced/crushed garlic   
      
   Marinate as long as 8 hours in the fridge but can be as little as 30 mins.   
   Cook the meat in a heavy (cast iron preferred) pan with the marinade for 4-5   
   mins per side then turn heat off and let it 'rest' as you fix the rest of   
   dinner.  Slice across the grain into long thinnish strips to serve.  Should   
   be pinkish red still at the center for our tastes.
