The Inu-yasha anime stopped because they ran out of manga to copy.
It didn't have an 'ending' as such. A common problem when anime is
based on an on-going manga; the anime catches up and then stops
or adds 'filler' (where nothing happens) while waiting for new manga
   stories.

FMA diverged because they ran out of manga to copy, but rather than just
   stop
they made up different stories about the same characters.

Neither manga series has finished, but IY is supposed to finish soon.
(And they might continue the anime then, or do a few OVAs).
