I never paused       to think of the coercivity of the core material before, and your explanation       makes immediate sense.              I wonder, could the core be degaussed with a (large enough) version of a tape       head demagnetizer? Furthermore, could such a procedure be even as desirable a       routine maintenance step in such transformers as it is in tape heads?
