Title: Baked Beans Mole

Yield: 8 servings
1/4 lb Fresh chorizo; crumbled
1/2 c Chopped onion
1/2 c Chopped sweet red pepper
1 lg Garlic clove; minced
15 oz Can black beans; rinsed,
- drained
15 oz Can pinto beans; rinsed,
- drained
15 oz Can black-eyed peas; rinsed,
- drained
1 c Salsa; medium or hot
1 c Heinz chili sauce
2 tb Honey
1 tb Instant coffee granules
1/2 ts Ground cinnamon
2 oz Chopped bittersweet
- chocolate
Minced fresh cilantro
Queso fresco; opt
Set oven @ 375ºF/190ºC.
In a large ovenproof skillet with a lid, cook chorizo,
onion, red pepper and garlic over medium heat until
sausage is browned, 4-6 minutes. Add remaining
ingredients; mix well. Bake, covered, until mixture is
thickened and flavors are blended, about 40 minutes.
Sprinkle with cilantro and, if desired, queso fresco.
