Title: Easy Apple Cake

Yield: 20 servings
1 3/4 c Sugar
1 c Canola oil
3 lg Eggs
1 ts Vanilla extract
2 c A-P flour
1 1/4 ts Baking powder
1 ts Salt
1 ts Ground cinnamon
1/4 ts Baking soda
2 c Peeled tart apples, fine
- chopped
1 c Chopped walnuts
1 1/4 c Whipped topping
Set oven @ 350ºF/175ºC.
In a large bowl, beat the sugar, oil, eggs and vanilla
until well blended. Combine the flour, baking powder,
salt, cinnamon and baking soda; gradually beat into
sugar mixture until blended. Fold in apples and walnuts.
Transfer to a greased 13" X 9" baking dish. Bake until a
toothpick inserted in the center comes out clean, 35-45
minutes. Cool on a wire rack. Serve with whipped
topping.
