   Well, since there is no electronic output from such a projector (like   
   SCART from a VHS) there should be no other way than the way movie   
   pirates use. Record it with a digital camera. I would prefer a camera   
   recording in mp4 on a sdhc card. Use a tripod.   
   It could require some try and error.   
      
   The other way could be to scan each individual 8 mm picture for   
   required meters of film. But I have never heard of software required   
   to make film out of it.

   Scanning from movie film is called telecine, and the systems are expensive   
   beyond the reach of individuals. Although most are for 32 or 16mm, some   
   systems can do 8mm - I designed a lens for a telecine scanner that could   
   handle a range of film formats including this, a couple of years ago, which   
   worked pretty well. The interest in 8mm was I believe something to do with   
   archiving "home movies" of a particular genre! You could possibly find   
   someone to digitize the film for you, for $$.
