Starship can go to the Moon without refuelling in orbit, the dearMoon
project is supposed to do just that. So it can wait in LEO for some time
before being refuelled. I don't know how SpaceX plans to do their
refuelling, they might want to launch a few minutes apart. But I'm sure
that the refuelling will be high enough for the orbit to be stable so it
   could be done days apart.

Note that this refuelling business is only for missions requiring more
power than the already enormous amount of power provided by Starship.
For missions to the lunar surface, to Mars or "to infinity and beyond".
